The other day, I made mini cheesecakes. They're basically cheesecakes in muffing tins. They were really good, and you can put any kind of topping on it!

Funny you should ask...
I gave up meat this spring and I've had no choice but to start preparing some decent food for myself. (Yahhh I could eat frozen dinners and grilled cheese, and call that vegatarian, but I'm not sure that's the healthiest route...)

I keep finding myself making zucchini bread since the zucchinis coming out of the garden seem to be multiplying and I didn't want throw them away.

Another recent cooking adventure was my grandmother's recipe for Everlasting Pineapple Salad. Even with whip cream, it lasts for two weeks because of the pineapple and lemon juice in the recipe. I made it originally to share with Grandma, who's now in a nursing home (much to her dismay would be putting it mildly). Frankly, I'm not sure how else to connect with her, so food is my communication channel with her.

With October just around the bend I'll be making Pumpkin Pasties soon... based off of Harry Potter... think mini pumpkin pies, but they have a sugar cookie crust instead of grahm cracker.... mmmm i luv autumn!! Apple picking soon also means homemade apple sauce!!

Pineapple salad sounds awesome!

No, I'm not sure if you could get a pumpkin in iceland.

I've been trying to be vegetarian recently. We used quorn mince to make spaghetti bolognaise tonight and it was delicious. The quorn tastes just as good while being healthier, cheaper and easier to cook - I don't see why I would turn back!
