Boyfriend's Mum, super cook?
Shepherds pie is good, but the way i make it is amazing (if i do say so myself!!)
Fry off the peas and carrots until they're brown.
then You fry the minced lamb, add seasoning (i use corriander, basil, oregano, and Pepper) then add stock cube and add the cooked carrots and peas. Then use some plain flour (a spoonful at a time) to absorb all the fat/juices.
Maeanwhile cook the potatoes then mash WITHOUT milk and butter.
Put meat in a dish and cover with mas, then add some leeks on top and cover it with cheese....bung in the oven for 20mins/half hour and......AMAZING!
Lime Scallops with Orzo... I don't know the recipe off the top of my head, but it's a delicious seafood dish that's easy to make...
Also, Tandoori chicken with curry rice is great as well, and not too spicy... but it's a curry-lover's dish so it's kindof an acquired taste.
This recipe is super easy and also delicious. I made this for my parents after not seeing them for a couple of months and they were very surprised and kept saying how good it was. Hopefully it works as well for you.

You should really check the internet for easy recipes. I mean, obviously you've already thought of that, but sites like AllRecipes (http://allrecipes.com/Recipes/Top.aspx) or even the Food Network (http://www.foodnetwork.com/quick-and-easy/index.html) are great places to start. (And, as long as you know the very basics, why not ask to cook with your boyfriend's mom sometime?)
