How did you get started?

I moved to Wichita as a single mom from a country farm house near small town Kingman, KS. I've grown Echo Landscapes for 15 years and noticed a need for healthy food to feed our strong working bodies in the gardens.

Where are you located?

We found a lovely inexpensive dental office and fenced in green space at 2516 E. Central in Wichita, KS. The building has been remodeled with recycled and repurposed materials and native clay. This fall we will begin growing the green space into a food forest for the cafe and seating area for our guests.

What are your specialities?

Here at Beautiful Day Cafe we source locally and buy organic foods as much as possible. We use no GMO's. Our beef is grass fed, eggs and chickens are free range and we have vegetarian, vegan, raw, gluten free and low glycemic menu choices. Breakfast and soup, salads and sandwiches are served from 10:30-2:30 M-F and 8:30-2:30 on Saturdays. Soon we'll be open at 8:30 week days too.

What's your personal favorite thing on the menu?

I love the Hippie Porridge parfait. It's loaded with flax, chia and toasted oatmeal in vanilla almond milk served with a layer of yogurt, topped with fruit, nuts and coconut cream. My body just soaks it up!

What's on the stereo?

We have a varied crew and play a mix of coffee house, folk, old rock, r&b, with motown etc.

Where else should we visit in your area?

I like Izzie's pizza, The Lotus Leaf has a great fish plate and Garden Grill serves the most wonderful vinaigrette on their salads with a lunch buffet.

Do you host any special events?

Art shows are hosted once a month and we have health classes, creative writing classes. Call us for reservations in the evenings.

Is there anything else you'd like us to know?

We care about our Earth and the wellbeing of our guests, employees and suppliers. We believe in Sacred Commerce as it's expressed in the book by Matthew and Terces Engelhart. They're the founders of Cafe Gratitude and I'm grateful for them and their awareness.
