Eton Mess Cake Tasty & easy to make.
Great way to use up strawberries.
Heat oven 180 degrees.
Cream butter & sugar together.
Add eggs & vanilla & mix through.
Add flour & baking powder.
Stir to combine.
Pour in to a tin.
Bake for 30 mins until cooked through.
Allow to cool.
Whip cream & icing sugar together.
Cut cake into layers.
Fill & top with cream, strawberries & crushed Meringue.
Serve.
