What have you been cooking?

I've been trying to cook more, so each week I've been picking a new recipe to try for dinner and I was wondering what delicious things you've all been cooking to give me some inspiration!

tofu burger (posted this one as a project already), sushi with tea-brined salmon, caviar and cream cheese, oriental corn soup, cheese muffins, Indonesian style shepherd pie, hainam rice, hoisin chicken, curry fried chicken wings, German klopse, Greek stuffed paprika with rice (forgot the name), gulasch...

I am currently in culinary school so I get to cook everything… but at home I have been making a ton of rice. There are so many varieties; I use different mixtures for flavors but rice is my staple right now. My favorite is white rice cooked with garlic onion celery and carrot…. rice pilaf is what I am certain others are calling it…lol but it really is fantastic and gluten free!!!! yay!!!

One type of recipe I'm trying to make more often is stir-fries. They're so versatile and can use basically any ingredients you have at your hands. Not to mention the fact that they're quick, healthy, and delicious. My latest stir-fry used Korean marinated beef with slices of zucchini and squash. It was absolutely to die for!

My go to for the days that I forget to plan something or don't feel like doing much is to chop up potatoes, carrots, onion, squash, and sweet potatoes or any combination depending on what I have. I at olive oil and whatever seasoning I feel like, lately it's been ranch. I start that cooking and then add some type of meat usually brats, sausage, chicken, or ground hamburger. I grow purple potatoes, so depending on what I use, it usually a nice color combo and there generally are no leftovers.

we have chickens... eggs eggs eggs !!! egg on avocado toast, mini souffles, egg bakes, eggs in ham cups, pasta carbonara... if anyone has a great egg dish i am all ears!
