I have started baking cookies a lot lately. My second batch were lovely and soft, this weeks batch were crunchy and hard.

1: I think my butter was too cold, the butter has to be at the right consistency to make the best cookies. Not oily soft, but soft so that when you pick it up you leave finger marks.

2: I used different eggs. I usually use brown organic eggs, but this time I used white eggs.

So for me it could have been a bit of both of those things, but I would definitely tell you to make sure your butter is right.

this is a good story, but you have to log in now to read it.

They say to chop your butter into chunks before you cream it.

Good luck with the cookies Happy

Mine tend to do the same - When I put them in the oven it says only put them i for about 15 mins but me being me waited until they were a golden brown...they were like rock cakes.

Only leave them in for a while - even if they feel slightly squishy. They harden once they have been taken out of the oven.

If they are very brown it may be the style of cooker Happy Hope this helps.

Did you use enough flour? Sometimes recipies (like the one on the back of Nestle for chocolate chip cookies) don't actually call for enough flour. I often end up adding an extra cup for good measure.

It depends on your oven. I lived in a place with an oven that wasn't calibrated properly. It was like 100 degrees over. Everything burned!

Make sure they are on the middle rack and that you rotate the baking sheet.

agree with pikapal. my oven was off as well. i got an over thermometer and go by that temp now, not the one on the oven.

another suggestion would be to check the freshness of your baking soda and baking powder. they do go off after a bit.
