Quick and easy comfort food.
I had a fairly large bag of apples, so I thought, I could make a pie. I call it stash buster because it’s not so much a recipe as an idea using whatever I had around. It could be made vegan if you use vegan butter for the topping. The maple syrup is optional. I added it because I ran out of sugar.

  • Step 1

    Chop up 4-5 small honey crisp apples. Put in a large bowl. Sprinkle with lemon juice. I used half a lemon because it was what I had. Sprinkle with 1/2 cup sugar, 1/4 teaspoon allspice, and 1/2 teaspoon of vanilla. Mix well and let sit.

    Heat up the oven to 375 degrees F. Spread the apple mixture in a 13”x9” baking pan.

    While the oven is heating up, make the topping. Pour 1 1/2 cups flour in a large bowl. Add 1/3 cup sugar and 1/3 cup brown sugar. I did not have brown sugar and did not have enough white sugar, so I put in 1/3 cup sugar and two tablespoons of pure maple syrup. Add 1 1/2 teaspoons of baking powder. Then add a cold stick of butter and mix it into the flour mixture with a knife.

    Add 1/3 cup of boiling water and keep mixing (this is when I added maple syrup). Continue to mix until lumpy. Pour topping evenly over the apples.

    Bake for around 30 minutes. I used a larger pan, so mine was spread out thinner. You may have to cook it longer if you use a smaller pan. I would say set the timer to 30 minutes and check every 5 minutes after that. I have a TON of caramel sauce so I poured it over the finished cobbler. Let it cool a little and enjoy!
