Vegetarian low fat pies
Vegetarian low fat pies that all my vegetarian and carnivore friends enjoy equally. My 10 month old thinks they are great also, although I make his minus the pine nuts. I make pines in bulk as I work stupid hours and sometime, throughing a homemade pie in the microwave is much easier then making dinner when I get home and waking everyone up in the house, and much better then take away in my opinion

This is the recipe for one of my pies I make in bulk, ill add more how to's as I stock up on others,, I hope you enjoy

    1. Preheat oven to 200°C. Grease Pie maker, Place pumpkin and garlic on a baking pan lined with baking paper. drizzle with oil, chives, thyme and season. Roast for 20 minutes or until cooked.

    2. Cut rounds from the pastry sheets using a cutter. Press into holes of pie maker to cover base and sides. Whisk eggs and cream together. Divide pumpkin and pine nuts among rounds, top with 1 teaspoon of egg mixture, then sprinkle with feta. Bake for 15-20 minutes until golden. Cool slightly, then turn out.

Does this still taste as good without the pine nuts? That might be the only thing I have q problem with finding.. other nuts seem plentiful but rarely see pine nuts.

You could miss them out or substitute them for sure, I haven't eaten them without pine nuts, my ten month old like them without pine nuts. Pine nuts don't have an extremely strong flavour so I guess it wouldn't natter to much

Im not sue depending where your from I guess I'm in Australia and they pretty well stock them in the most local supermarkets in the cooking section. Good luck Hun

I will check out a few places, i would love to try this exactly as you have made it if I can. Ah nice Australia! I live in Canada and hope one day to visit Australia. That is beside the point and a little off topic. I suppose I will just have to do a bit of a scavenge hunt for them Happy
