Mug Meals
If you like, vary this tropical dessert by using fresh or canned and drained pineapple chunks instead of the mango. Omit the ginger if you don’t like it.

You Will Need
¾ cup
Frozen
Mango
chunks (not thawed)
2 tbsp
Maple Syrup
1 tsp
Fresh
Lime Juice
1 tsp
All Purpose Flour
½ tsp
Minced
Crystallized Ginger
¼ tsp
Ground Cinnamon
⅛ tsp
Kosher Salt
2 tbsp
sweetened
Shredded Coconut
2 tbsp
Plain
Granola
1 tsp
Unsalted Butter
, melted
Scoop of
Ice Cream
, sorbet, or Greek yogurt, for serving
(tropical or plain flavor—your choice!)

Step 1
In a small bowl, stir together the mango chunks, syrup, lime juice, flour, ginger, half of the cinnamon, and the salt. Pour into a 12-oz. mug and sprinkle with the coconut, granola, remaining cinnamon, and melted butter.

Cover and microwave until hot and the fruit filling cooks through, about 2½ minutes. Top with ice cream, sorbet, or yogurt.
