Step 1
Heat oven 350/175 degrees.

Cream butter & sugars together.
Step 2
Add egg & vanilla.

Stir through.
Step 3
Fold in flour, salt, baking powder & bicarb until just combined.
Step 4
Fold in coconut & corn flakes.
Step 5
Drop spoonfuls of dough on to tray.

Bake for 8-10 mins.

Squash with a spatula when just out of oven.
Step 6
Cool.

Serve.
