Looking for some worldly, but cheap, meals to perpah

I'd hate to admit this, but my boyfriend has a wicked racist streak once and a while (he's trying to get over it, honestly, but he grew up with REALLY bad racist parents, and grandparnets)

but, i thought a good way to help him get over it, is through his stomach. he loved foods of all kinds, but i only know the basics of fooding. if anyone has got some really tasty, but cheap and easy, world food. Im more than willing to have it.

Spanish rice; rice, peppers, tomato sauce

Chinese brekie: rice, sausage(chopped), green beans and corn.

jiggs dinner: boiled potatoes, boiled carrots, boiled turnip and boiled cabbage (from Newfoundland)

goe ba ro: chinese sweet and sour beef (check my profile)

chinese mashed potatoes: mashed potatoes, red bean sauce and shredded carrots
