Mmmm Quesadillas!

They're so much better than sandwiches. This week, instead of opting for boring old bread for my sandwiches, I picked tortilla bread so that I could make quesadillas. Today I'm having them filled with cheese and quorn chicken slices.

While I can't imagine ever being sick of bread, I too love quesadillas. My favorite is with cheese, either chicken or ground beef, Taco Bell taco sauce, and peppers. And of course sour cream and guacamole. Mmm.... quesadillas.

When I made some Quesadillas, and put my version on the site, I put in home made salsa and mexican rice and omword! it was delicious. I do love them but I get worried about the frying aspect, all the fat!

I had some horrible Quesadillas in a mexican restaurant recently. They were so bad with vegetarians. It was literally LOADS of cheddar cheese and then some chopped up raw salad vegetables, like peppers and celery and carrot and raw mushroom. No spice at all. It was hideous. Also, I'm slightly allergic to dairy, but normally I'm fine with cheese, just a lot of cheddar makes my cheeks go all hot flushy and I get funny goosebumps on my arm (They stay up like goose bumps for the whole night, they're not proper goosebumps- they just look it) and after a few triangles of that Queasadilla I was having my 'cheese sweats' and I just had to stop eating. Safe to say I'm not going there again!

I don't put any oil or fat in the frying pan when I cook my quesadillas anymore. I put the pan over the highest heat and after about 30 seconds it's toasted on one side, so I flip it and leave it for another 30 seconds until it's done.
