• 

  Step 1

  In a bowl mix sugar, yeast & water.

  Let sit for 5 mins.

• 

  Step 2

  In a large bowl mix the flour & salt.

• 

  Step 3

  Make a well in the middle.

  Pour in the oil.

• 

  Step 4

  Then pour in the yeast mixture.

• 

  Step 5

  Combine together.

• 

  Step 6

  Knead until the dough comes together & is smooth.

• 

  Step 7

  Place into an oiled bowl & cover with cling film.

  Leave to prove until well risen (approx 1 hr).

• 

  Step 8

  Knock back the dough & knead for a couple of mins.

  Cut into two pieces.

• 

  Step 9

  Oil baking tin.

  Roll dough into a longish shape to fit into the tin.

  If adding coconut do this now whilst kneading it into the dough.

  Place in tin & cover again to prove.

  Step 10

  After dough is risen (approx 20 mins)

  Remove cling film & place in pre heated oven gas 7/220 for 15 mins.

  After 15 mins, turn oven down to gas 6/200 for 15-20 mins.

  Step 11

  Once cooked remove from oven & cool on wire rack.

• 

  Step 12

  Slice when completely cold & serve.
