Vanilla Baked Doughnuts
These vanilla baked donuts are super simple to whip up. All you need is a couple of mixing bowls, a whisk and a doughnut pan. If you don’t own one, you need to get one ASAP. You can have fresh baked donuts in less than 20 minutes and they are much healthier than the usual fried ones.

Step 1
For the doughnuts
Heat oven to 350°F/175c
Lightly spray a doughnut pan with cooking spray
In medium bowl, stir together flour, granulated sugar, baking powder,, cinnamon
In a separate bowl beat chia egg, oil, milk, maple syrup, and with a whisk.
Pour wet ingredients into dry ingredients; fold until just combined.
Transfer mixture to the doughnut pan filling about half full.
Bake on centre oven rack 10 to 12 minutes or until doughnuts are golden around edges and spring back when touched.
Remove from oven, repeat with remaining batter
Four the glaze -

When the doughnuts are cool make the glaze by mixing the powdered sugar with the light coconut milk until very smooth.
Do not add too much liquid. You need the glaze to be very thick but pourable.
If you want a white glaze you can ignore the next steps
For the pink glaze add a drop at a time of natural pink food colouring until you get a baby pink colour
For the cacao add around 1/2 tsp until you reach your desired colour
Dip the nicely rounded side of each donut face down into the bowl of glaze then return to the cooling rack. After dipping the last donut, start again with the first. We want to double dip them to get a nice thick glaze.
Leave on the cooling rack until the glaze has set.
