• 

  Step 1

  Blitz together the almond meal, icing sugar and rose petals in a blender until fine. Remember to save a few rose petals to decorate your shells with later.

  Step 2

  Sieve the mixture in to a bowl.

  Step 3

  Whisk the egg whites until they form stiff peaks and then whisk in the sugar. You can get more detailed instructions on this step in my other macaroon tutorials here on CO+K.

  Step 4

  Fold the almond meal mixture in to your egg whites and mix in the rose essence.

  Step 5

  Pipe your batter in to small circles on a baking sheet. I recently bought a special macaroon baking mat which is really handy.

  Step 6

  Bake in the oven at 160'C for 15 minutes and leave to cool.

  Step 7

  Meanwhile, pop the Turkish Delight in to a saucepan over a low heat.

• 

  Step 8

  Stir the Turkish Delight until it begins to melt and add the honey.

• 

  Step 9

  Spoon a small amount of batter on to one half of the macaroon shells and spread evenly.

• 

  Step 10

  Twist on the other half of the shell and decorate with a few rose petals using a small dab of water.
