I love mushrooms, and to stuff them Is even better. This recipe makes two stuffed mushrooms which is perfect for a side dish for dinner or a lunchtime meal

Step 1Preheat oven to 160•c
Place herbs, butter, almond meal, garlic, Brie and bread crumbs into a bowl, remove stalks from mushroom, dice and add to the same bowl if breadcrumb mixture, mix together really well

Step 2Line a oven tray with baking paper, place mushroom on baking paper and stuff with your breadcrumb mixture. Pressing down so it all stays neat on top of the mushroom

Step 3
Place mushrooms into oven and bake for approx 15 minutes or until mushroom is soft and juices are running onto the paper. Remove from oven and serve
OPTIONAL: you can sprinkle with Parmesan and return to oven for a couple minutes or until melted
