Amazing marshmallows with a hint of strawberry flavor!
These were a total breeze to make, and I used the strawberry sugar I made previously (https://theyearlingblog.wordpress.com/2015/02/05/day-37-strawberry-sugar/) to give them a sweet strawberry flavor. The only problem is having to wait for them to set up.

    Your ingredients.

    Bloom your three packets of gelatin in a half cup of water.

    Combine your sugars, corn syrup and the last 1/2 cup of water into a saucepan and cook over high heat until you reach 420 F. Then immediately remove from heat.

    Put your gelatin into a stand mixer and turn it on low to break up the disc of gelatin.

    Then, slowly and very carefully, pour your strawberry sugar mixture into the bowl.

    Increase the mixer speed to high and let whip for 8-10 minutes.

    Once it's done whipping take it out and put it in a greased and lined pan. I used a 13 x 9 but if you want thicker marshmallows feel free to use a 9 x 9.

    Cover with another piece of greased cling film and let sit for 6-8 hours at room temperature to set.

    Once you've done that, flour a work surface with a mixture of the corn starch and powdered sugar and turn out your marshmallow block onto said floured work surface.

    Then cut them to whatever shape you like, toss them in the corn starch/powdered sugar mixture to stop them from sticking and use a fine mesh strainer to get rid of any excess powdered sugar.

    Then just plate them up, serve and watch them disappear before your eyes!
