Scottish Fruit Loaf
Mix everything in the same pot to save on washing up.

I used mixed fruit instead of raisins & sultanas.

    Step 1

    Add fruit, sugar, water, bicarb, mixed spice, cinnamon & butter to a pan.

    Heat until butter & sugar are dissolved. Do not boil.

    Allow to cool for 15 mins.

    Heat oven 180 degrees.

    Add eggs to fruit.

    Stir through

    Add flours.

    Mix until no lumps.

    Pour into a tin.

    Bake for 1 hr 15 mins to 1 hr 30 mins until cooked through.
