Breakfast Poutine Boat
Sarnia is known for its love of french fries and is rated in the top ten places in Canada to have them. This breakfast themed poutine allows you to eat french fries with some amazing breakfast toppings

Step 3
When your potatoes are done its time to move onto the bacon. If you don't have access to fresh bacon you could easily use bacon bits or microwave bacon. You could also swap out the bacon for ham or turkey. Fry the bacon to your desired state (Some people like their bacon extra crispy, some like it soft)

Whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use. If the sauce gets too thick, whisk in a few drops of warm water before serving.

Build your poutine - you can use all your ingredients at once or layer like you are build lasagna
Start with a layer of hash browns, top with cheese, eggs and vegetables, finish with hollandaise sauce and bacon. Add salt and pepper to taste.
Alternate recipes include using salsa and ground beef to make a taco boat or gravy and cheese to make classic poutine.
