The taste of fall
This pumpkin spice ganache is a good filling for molded chocolates, truffles, or even an icing for cakes and cookies!

  • Step 1

    Keep the chocolate chips in a separate bowl and put the cream and corn syrup into a pot to heat up on the stove.

  • Step 2

    Whisk the cream and corn syrup on the stove and bring it to a boil. Now add pumpkin spice. This is something that I just eyeballed. I put enough in there so that I could see some specks in the cream.

  • Step 3

    Once you heat up the cream mixture, pour it over the chocolate chips and quickly start whisking the cream and chocolate together! You have to do it quickly otherwise the chocolate and the cream will not emulsify, and the ganache will be broken.

    Once the chocolate and the cream are completely mixed together, add the 1 tbsp of butter to the mixture.

    Your ganache should be creamy and thick and shiny! :D

    Let it sit for a while to cool and get firm. Probably about 45 minutes to an hour. Then, you may do with it what you please! I used mine as a filling for my molded chocolates!

pumpkin spice is things like cinnamon, cloves, nutmeg, ginger and allspice already mixed together. It's like quicky seasoning!
