• 

  Step 1

  To make the ice cream...

  Whisk eggs & sugar together until pale.

• 

  Step 2

  Add the cream & whisk together.

• 

  Step 3

  Add the milk & vanilla.

  Whisk together.

• 

  Step 4

  Pour into an ice cream machine & churn until ready.

• 

  Step 5

  Make the pralines...

  Toast the pecans & salt in a pan.

• 

  Step 6

  In another pan heat the water & sugar.

• 

  Step 7

  Once sugar mixture has turned light, golden colour, add the nuts & stir to coat.

• 

  Step 8

  Pour on to a tray & leave to cool.

• 

  Step 9

  Make the sauce...

  Place all ingredients into pan & heat gently until thickened.

• 

  Step 10

  Break the pralines up & bash with a rolling pin until broken down.

• 

  Step 11

  When ice cream is ready, add the praline & sauce & stir through.
