Plantain Ice Cream Split

Makes: one dessert—enough for two or three people to share.

Step 1
Toast the almonds in the dry skillet over medium heat, stirring occasionally. When the almonds are lightly brown, use the spatula to scoop them into a bowl.

Put enough oil in the empty skillet to lightly coat the bottom. Sauté the plantain halves for 5 minutes per side, until golden
brown. -
Step 3
Construct your split: Put the sautéed plantains in the bottom of your serving dish. Add ice cream. Top it with Hot Mama Fudge and diced mango. Dollop on whipped cream, and scatter the toasted almonds over the whole dessert. Finish with a sprinkle of cinnamon and a strawberry on top of the whipped cream. The plantain will be so deliciously soft you can cut it with a spoon.
