Turn the steak marinade into a dressing for this refreshing summer salad.
This is hands down my favorite salad right now. I've made it a few times in the past couple of weeks, which is saying a lot since I usually don't repeat recipes unless I'm really in love!

The best thing about this salad is that once the steak is done marinating in the delicious lemon, soy, brown sugar, olive oil & garlic mixture, you turn around and boil it to form it into a dressing for the salad.

It's a simple salad that yields amazing results!

Once the steak is grilled to perfection, it's sliced and placed on top of a bed of fresh arugula and accompanied by grape tomatoes, lemon wedges and walnuts.

  • Step 1

    Whisk together the oil, lemon juice, brown sugar, soy sauce & garlic in a bowl.

  • Step 2

    Place steak in a gallon-size Ziploc bag. Pour marinade in with the steak, close and seal the bag. Shake it up to make sure marinade is covering entire steak.

    Let the steak marinate for 30 mins.-1 hour at room temperature.

  • Step 4

    Heat grill to medium-high heat. Spray with non-stick grilling spray.

  • Step 5

    Take steak out of the bag, reserving the marinade in the bag. Place steak on the grill and grill to your liking (3-10 mins per side depending on how you like your steak cooked)

  • Step 6

    While steak is cooking, boil the marinade in a small saucepan for 3 minutes. Transfer to a serving bowl and store in fridge until ready.

  • Step 7

    Transfer steak to a cutting board, let rest for 10 minutes.

  • Step 8

    Slice meat against the grain into strips.

  • Step 9

    Add arugula to a salad bowl. Top with steak, tomatoes and walnuts.

  • Step 10

    Pour the marinade over the salad.
