Basil pesto with walnuts, lemon and Wensleydale cheese!
Tom and I had grown tired of living off Christmas leftovers so I hunted through the fridge and found everything I needed to make a lemon & walnut Wensleydale pesto. I was a little unsure about using Wensleydale in pesto but it tasted great with tagliatelle and was exactly what we needed to combat our chocolate comas.

    Finely chop the basil and place in a mortar and pestle.

    Crush in the walnuts.

    Grate in the zest and squeeze in the juice from half a lemon.
