Step 1Fill a cocktail shaker with ice and add the West Winds Gin.

Step 2Add the homemade thyme syrup (you can make your own using this recipe- http://www.cutoutandkeep.net/projects/homemade-thyme-syrup) and simple syrup.

Step 3Squeeze in the juice from one lemon.

Step 4Shake well and strain into a cocktail glass.
