You Will Need
400 g
Strong white bread
Flour
(Shipton Mill organic) plus extra for dusting
100 g
Wholemeal
Bread Flour
(Shipton Mill organic)
1
Generous teaspoon of
Salt
12 g
Of fresh
Yeast
280 ml
Of
Water
1 tsp
Of
Pink Peppercorns
½ tsp
Of black
Peppercorns
40 g
Raisins
50 g
Of
Walnuts
(roasted)
1 tsp
Of
Ground Cinnamon

Step 1
In a large bowl, mix flours, salt, yeast and water together to form a rough dough

Step 2
Coarsest grind peppercorns & add to the dough along with raisins, walnuts & cinnamon.

Continue kneading until all of huge ingredients are dispersed evenly throughout the dough

Leave to rest in a covered bowl in a warm room for at least 1hr

Tip the dough on a lightly floured work surface

Shape the dough into a oblong shaped bloomer & place on a lined baking sheet

Step 7
Leave to prove for a further 40mins

Step 8
Meanwhile, preheat oven to 230c/gas Mark 8.

Bake off for 30/35 mins until golden brown
