Yeah, you could totally do it flat 
Just knit up a long rectangle (in stockinette), add the decorations, fold in half with right sides facing and seam the sides, then turn and sew up the top (or bottom). I did i-cord for the arms, legs, and antennai, but i-cord is so easy on dpns it should be too much of a hassle~
