You can add some feta cheese into the dish if you like.

You Will Need

Step 1Combine all the marinade ingredients together.
Leave for at least an hour or longer.

Step 2Fry the chicken & onion in 2 tbsp olive oil.

Step 3Add the rice.
Stir to coat.

Step 4Add the stock & lemon juice.
Reduce heat, simmer until all liquid has been absorbed.

Step 5Stir through the parsley.
Replace lid and allow to sit for 5 mins.

Step 6Serve.
