You can use any type of potatoes you like.
I've used ordinary white potatoes & sweet potatoes.

Step 1Heat oven 200/400 degrees.
Cut potatoes almost through.
Place in a tray.

Step 2Pour over melted butter.

Step 3Combine the parmigiana, garlic, pepper, paprika, salt & herbs.

Step 4Spoon the mixture onto the potatoes.
Bake for 45-60 mins.

Step 5Sprinkle with parsley.
Spoon over the pan juices.
Serve.
