I really don’t like the word funfetti—but I do like eating funfetti-like foods. is light and flu y blondie is sneaky. It may look like a classic sweet treat on the outside (and taste like one!) but is packed with nutrients and wholesome ingredients. You can feel good about eating it anytime!

Step 1
Microwave Option:
Grease a microwave-safe bowl and set it aside.
In a small mixing bowl, combine your dry ingredients and mix well. Add your oil and maple syrup, mix, and set aside.
In a separate small bowl, add your egg white, vanilla extract, and 1⁄4 cup of milk and whisk lightly. Pour this into the dry mixture and mix very well until it’s fully incorporated. If the mixture is too thick, slowly add more milk, one tablespoon at a time, until a batter is formed.
Stir through the sprinkles and microwave for 1 to 2 minutes, or until the blondie is fully cooked through.

Oven option:
Preheat the oven to 350 degrees Fahrenheit. Follow the microwave directions, but place the batter in an oven-safe dish (the deeper the better) and bake for 12 to 15 minutes, or until a toothpick comes out clean.

I recommend using a large ceramic bowl, as it prevents overflow and can easily be dressed up with berries, yogurt, etc.
If your protein powder is unsweetened, you may want to add an extra tablespoon or two of granulated sweetener of choice.
Almond flour can be subbed with gluten-free oat flour, but it comes out a little more flat.
Swap out the maple syrup for 1 tablespoon or more of your favorite granulated sweetener. You’ll need to increase the milk of choice by a tablespoon or two.
