Creamy Coconut Ginger Chicken Creamy & flavourful.
Heat oil in a pan.
Cook the chicken with salt & pepper.
Place in a dish.
Heat oven 190 degrees.
Cook the onion, garlic & ginger together in the pan.
Add the peppers.
Cook out for a few mins.
Add the coconut milk & simmer until thickened.
Pour over the chicken.
Bake for 10-15 mins until chicken is fully cooked.
Sprinkle with chilli & parsley.
Serve.
