Step 1
Heat oven 350/175 degrees.

Cream together butter, sugars, egg & vanilla.
Step 2
Fold in the flour, bicarb, baking powder & salt.
Step 3
Add coconut.

Stir through.
Step 4
Place spoonfuls of the mixture onto a tray.

Bake for 8-10 mins.
Step 5
Serve.
