You Will Need
Muffins
2/3 cup
Oil
1/2 cup
Brown Sugar
1/4 cup
Sugar

Eggs
2 1/4 cup
Plain Flour
1 tsp
Bicarbonate Of Soda
1 tsp
Baking Powder
2 tsp
Cinnamon
1 tsp
Nutmeg
1/2 tsp
All Spice
1/2 tsp
Salt
1/2 cup Butter
Milk
1 cup
Carrot(s)
Grated
Filling
4 oz
Cream Cheese
2 tbsp
Sugar
1 tbsp
Plain Flour
Optional
1/2 cup
Pecans
Chopped

Step 1Heat oven 200 degrees.
Beat oil & sugars together.

Step 2Add eggs.
Mix through.

Step 3
Combine the flour, bicarb, baking powder, cinnamon, nutmeg, all spice & salt.

Step 4Combine wet & dry ingredients together.

Step 5Add butter milk & carrot.
Stir to combine.

Step 6Combine all the filling ingredients together.
Pipe into centre of the muffins.
Sprinkle the pecans on top.
Bake for 15-16 mins.

Step 7Cool & serve.
