Step 1Heat oven 350 degrees.
Mix together the flour, baking powder, Bicarb, salt, cinnamon, ginger, nutmeg & mixed spice.

Step 2Mix together oil, eggs & vanilla.

Step 3Mix together the flour mix & the egg mix.

Step 4Add the carrot & fold through.

Step 5Pour into a tin.
Bake for 45-50 mins until cooked through.
Allow to cool completely.

Step 6Cut the cake & fill with frosting.
Top with the remaining part of the cake.

Step 7Sprinkle with icing sugar.
Cut & serve
