Butternut Squash Soup
This is an easy to make soup.
Everything in one pot dish.
You can leave it chunky or blend it as I have done.
You can also add a little cream before serving to make it richer.

Step 1Cook the onions & garlic until just soft.

Step 2Add the potatoes, carrot & butternut squash to the onion mixture.

Step 3Add the stock & cook until the vegetables are soft.

Step 4Once cooked through taste for seasoning.

Step 5Blend the soup (if you choose to).
Serve piping hot with crusty bread.
