BuckWheat Waffles and Baked Plums
These light and Fluffy but beautifully crisp on outside waffles, are Gluten free, vegan and low sugar. served with a big dollop of coconut yogurt, baked plums and a drizzle maple syrup. yum!

You Will Need

Step 1
Start with the plums. Pre heat the oven to 180°C.

Place the plums cut side up in a baking dish, sprinkle with the coconut sugar and put the star Anais in with them, add ½ cup of water to the dish to stop the plums drying out. This also yields a little juice.

Place in the oven for about 20 mins to bake, keep an eye on them.

Next for the waffles. Place the wet ingredients in a bowl and allow to sit for a couple of minutes, this will create a kind of buttermilk.

In another bowl combine the dry ingredients.

Mix the wet into the dry and whisk until just combined, don’t overdo it, a few lumps are fine. Set the batter to side to rest until you’re ready to make your waffles and the plums have cooked.

Turn on your waffle iron to high, if it has a setting. The secret to successful waffle removal is in the oiling, oil very very very well, to point where you think it might be a little too much.

Add enough batter to waffle iron to allow for expansion. Cook to irons instructions, if you know your iron you will know how long it will take to cook them, I like them really crispy on the outside and would always allow a little extra minute due to the buckwheat flour.

When you’re ready to serve, remove your juicy plums from the oven, plate up your waffles, top with dollops of yogurt, a few plum halves, or quarter them, a sprinkle of pistachio nuts, drizzle of maple and a few rose petals if using.
