Single serve cheesecake, go ahead and indulge!
For this cheesecake I decided to indulge a bit and thought of a sort of cookie cheesecake almost. I added a little brown sugar onto the crust which gave a slight sweet crunch to it, and before baking I added some chocolate chips and some graham cracker crumbs as well as a little more brown sugar to the top. To complete it, just before enjoying it I added a little caramel sauce and had it with some hot chocolate.

Step 1
Preheat the oven to 325°F

Combine 250 mL graham cracker crumbs and 30 mL melted margarine together until crumbly. Scoop some into muffin cups and press the crumbs into the bottom (as well as the sides if you would like).

In a small bowl, beat egg white until soft peaks form. Gradually beat in 25 mL of sugar until stiff peaks form, then set it aside.

In a medium bowl, cream the cheese with 100 mL of sugar. Add in the egg yolk, flour, and vanilla. Beat until smooth, then add the light cream and beat until smooth again.

Fold the egg white into the cream cheese mixture.

Pour mixture into the prepared crusts.

Bake for 20 - 25 minutes or until the center is set and a toothpick inserted into the center comes out clean.

Remove from the oven and cool, then refrigerate for at least 4 hours or overnight.
Serve it any way you like!
