Go down a treat!
I made these for the girls on my own birthday and they were very popular! However, I take no credit for the original recipe, which has come from a Cupcake recipe book.

For the cake, you'll need:

175g Self Raising Flour
175g Caster Sugar
110g Butter
2 Eggs
1 Tbsp Vanilla Extract
4 Tbsp Milk
55g White Chocolate Chips

For the icing, you'll need:
2 Tbsp Baileys
55g Butter
175g Icing Sugar

  • Step 1

    You'll firstly need to pre-heat your oven to 180C / Gas Mark 4 and line your baking trays with paper liners.

  • Step 2

    Throw in the flour, caster sugar and butter in a mixing bowel and get mixing. I mixed with a spoon but an electric whisker on medium speed is fine.

  • Step 3

    Add the eggs, one by one to the mix, beating each one well. Add the Vanilla extract and milk and mix in followed by the white chocolate chips.

  • Step 4

    Distribute the mix into the paper liners and place into the oven for 18-20 minutes. They need to feel springy when you touch them; if not, they may need slightly longer in the oven. Afterwards remove and let cool for 5-10 minutes.

  • Step 5

    While the cakes are cooking or cooling, get started on the icing. Put the butter and Baileys into and mix together. I added a bit more Baileys than the recipe said but be careful not to make it too strong! Gradually add the icing sugar and beat again until the mixture is thick and creamy.

  • Step 6

    Now is the time to spread the icing over the cooled cakes and add whatever decoration you want. I added chocolate curls but as you can see, not many survived after transporting them!
