Step 1Fill a bowl with one tsp of salt & cold water.
Place aubergine in water & weigh down for 15 mins.
Drain & pat dry.

Step 2Mix soya sauce & corn flour.

Step 3Coat aubergine with extra cornflour

Step 4Fry the aubergine in a little oil for 8-10 mins.
Remove to a dish.

Step 5Fry the garlic & ginger in oil.

Step 6Return the aubergine to the pan.

Step 7Add the soya sauce, salt & pepper & stir to coat.

Step 8Serve.
