There are plenty of great zombie crafts on this site.

You could always try painting or drawing too, maybe make some kind of guide book or game, plushies are always a fun idea, a stencilled patch for clothing or a purse/backpack, or zombified body part pendants/charms/keychains of a polymer clay.

You could even modify toys like My Little Pony, rubber duckies, Hello Kitty/related characters, or maybe a Barbie, there are lots of tutorials easily found through Google.

Another fun idea would be a Z-Day survival kit! You could put a barbie sized shotgun, fimo twinkies, ammo boxes...for some reason I'm starting to think antiseptic and bandages would be good, too....but I doubt antiseptic would stop the virus!!!
I painted a small piece of posterboard, folded into a card, with a picture of a zombie face, a heart, and a brain. Then inside I wrote(also with paint) "I love you for your BRAIN!!" for my fiance's valentine from me!!!
