This is very special strawberry shortcake as the biscuit contains almonds.
It is a great summer desert.

Step 1Heat oven 180 degrees.
Rub the flour & butter together.

Step 2Add the almonds.
Stir through.

Step 3Add the sugar.
Stir through.

Step 4Gather the crumbs into a dough.
Divide into two.

Step 5Press into two circles.
Prick with a fork all over.

Step 6Bake for 20 mins.
Remove from oven cut one piece of shortbread into 8 triangles.
Set aside to cool completely.

Step 7Make the cream...
Whip the cream, vanilla & sugar together until thick.

Step 8Slice the strawberries.
Fold 3/4 through the cream.

Step 9Spoon the cream/strawberry mixture onto the biscuit base.

Step 10Top with the triangle shortcake.

Step 11Top with remaining strawberries.

Step 12Sprinkle with icing sugar.

Step 13Cut & serve.
