Spaghetti with garlic mayo, fresh lemon, greens and Quorn chicken

Step 1Before you begin, bring a pan of water the boil and cook the spaghetti for around 10 minutes. When there's 5 minutes to go, pour some olive oil into a frying pan and cook the chopped garlic. Sprinkle with chilli flakes.

Step 2Add the green vegetables.

Step 3Add the Quorn roast chicken.

Step 4Once cooked, remove from the heat and grate over the zest from the lemon.

Step 5
Add the cooked spaghetti.

Step 6Squeeze in the juice from the lemon and mix in the garlic mayonnaise and parmesan cheese.

Step 7Drizzle with olive oil, season with salt and pepper and serve.
