3 tbsp buttermilk
for the salad:

You Will Need
3 tbsp
Buttermilk
2 tbsp
Mayonnaise
½ tbsp
finely grated fresh
Horseradish
, or 1 tbsp prepared horseradish
2 tbsp
to 3 tbsp minced fresh
Chives
2 tbsp
Extra Virgin Olive Oil
Salt
and freshly ground black pepper
3 ½ oz
Arugula
2
heads little gem
Lettuce
, or 2 small heads romaine, very finely chopped

Granny Smith
Apple
Juice of 1/2
Lemon
2
smoked
Trout
fillets, or 1 smoked mackerel fillettoast for serving

Step 1
Make the dressing: In a small bowl, whisk the buttermilk, mayonnaise, horseradish, and chives thoroughly, then trickle in the oil, whisking constantly. Season with salt and pepper.

Step 2
Make the salad: Toss the arugula with the lettuce. Julienne the apple (leave the skin on), and sprinkle it with the lemon juice.

Step 3
Pull the fish from the bones and toss the fish and the apple with the lettuce mixture. Spoon the dressing on top, toss, and serve immediately in nice coupes, with toast.
