I had never made a pie before and found recipes on-line where never basic enough and didn't explain everything clearly so decided to do it MY way! if you don't have diced beef you could substitute it for minced beef

take your puff pastry and cut in half, roll out to about half cm thick. heat your oven to 200 degrees
line pie dish with your pastry that you have just rolled and then trim round the outer edge of your dish prick pastry bottom with a fork then line with tinfoil load with rice to weigh down the pastry so the bottom doesn't rise bake for 20 minutes at 200 degrees (conventional oven) or untill golden in colour while waiting for the base to cook roll out the "lid" pastry take base out of the oven and set to one side.
chop potatoes into smallish cubes and set to one side
fry of meat in a little oil till brown using a sauce pan (this saves on washing up) make up your gravy enough to cover meat and potatoes (non instant is better) add chopped potatoes to meat pour on gravy, adding salt and herbs to taste (optional) bring to boil and simmer for 45 mins
take your cooked pastry that should be reaonably cool by now add your pie filling to the pie.
wisk one egg and apply to edge of the pastry
place the pastry "lid" on top of the pie, press down edges to seal, cut off any excess pastry cover the "lid" with some of the egg, (if you have pastry left over you can always make a design on the pie) cut a cross in the pie (to allow steam to come out)
cook for 20mins at 200 degrees or until golden brown. take out oven, and enjoy :)
