Before you begin, remove the skin from an orange and cut into thin slices. Heat the water in a sauce pan and add the sugar, stirring to dissolve.
Bring to the boil until the syrup begins to thicken and turn golden.
Squeeze in the juice from the orange.
Meanwhile begin gently frying the seitan and baby corns in a frying pan with a little butter.
Add the red wine vinegar, stock and port to the sauce. Bring back to the boil.
Reduce the sauce until it becomes a slightly syrupy.
Add the seitan, baby corn and orange slices to the sauce and cook for a few minutes.
Remove from the heat.
Serve with rice or potatoes.
