This is a really nice soup.
Roasting the veg makes all the difference to the flavour.

You Will Need

Step 1Peel & chop all veg.

Step 2Place in a roasting tin with a drizzle of oil.

Step 3Cook in oven 200 degrees for approx 60 mins, until veg are soft.
Stir the veg a few times throughout the cooking time.

Step 4Add veg to a pot.
Cover with veg stock.
Simmer for approx 30 mins.

Step 5Blend soup.

Step 6Serve.
