Pretty fairy cakes, perfect for any princess!
Since the cup cake craze has exploded over the last year or so I have got involved and had a go at making them but I don't think anything can beat a traditional English fairy bun... simple yummy and not topped with sickly icing.
Its an mouthful of quintessential Britishness...and blooming yummy.
Enjoy.

  • Step 1

    Pre heat the oven to 180.

  • Step 2

    In a mixing bowl cream together the butter and sugar until light and creamy.

  • Step 3

    Gradually add the eggs ensuring the mixture doesn't curdle.

  • Step 4

    Sift in the flour and mix until smooth.

  • Step 5

    Spoon the mixture in to cake cases ( makes 12 small cakes)

  • Step 6

    Bake in the oven for 10 -15 minutes or until cooked .

  • Step 7

    When cakes are cooked, take out of the oven and leave to cool on a wire rack.

  • Step 8

    using a tea spoon cut a circle out of the centre of the cake creating a well.
    Do not cut all the way to the side or bottom of the cake or the filling will spill out.
    Save the cut out centre for later.

  • Step 9

    add a tea spoon of jam and then a dollop of cream or butter cream to the well in the cake.
    Cut the cut out centre in half to create a butterfly's wings...

  • Step 10

    Place the wings on the top.. sprinkle the cakes with icing sugar and edible glitter.

    Add decorations such as these butterflies and flowers I made using royal icing.

non-sweet cakes for the win!
I dont have a sweet tooth, and i love baking fairy cakes just like my grandma used to.
ps im english so these cakes would be "normal"
