Inspired by the hints of mint and lemon in Daffys Gin, this cocktail combines gin with peppermint tea, fresh mint, simple syrup and lemon juice for a fruity and refreshing martini.

Step 1Brew a cup of peppermint tea like you normally would and allow it to cool.

Step 2Fill a cocktail shaker with ice and a few fresh mint leaves.

Step 3Pour the peppermint tea, Daffys gin and simple syrup into the shaker.

Step 4Squeeze in the juice from half a lemon.

Step 5Shake well and strain into a martini glass.

Step 6Garnish with a twist of lemon and a mint leaf before serving.
