My Favorite Naughty Caramel Corn
I am always a little stunned at how many people love this popcorn. Probably because it is sweet and salty and what woman doesn't love a sweet and salty treat every now and then? Anyway, it is extra yummy and a huge hit at parties, so I am always asked to bring it and everyone is constantly hounding me for the recipe. Here it is, my secret revealed.

  • How to make popcorn. Margueritaville Caramel Corn - Step 1
    Step 1

    Pop either 2 bags of microwave popcorn or 2 batches of air popped popcorn. Place it in a greased baking dish (you might need 2 13x9" pans for this). If you use microwave popcorn, you should watch out for all of the unpopped corn when you dump it onto the cookie sheet.

    Keep it in the oven at 200 degrees while you are making the sugar.

    In a heavy bottom sauce pan combine 1 cup butter, 1/2 cup corn syrup, and 2 cups of white sugar.

    Bring to a rolling boil and boil for 5 minutes.

    While it is coming to a boil, vest 2 limes and juice them.

    Add lime juice, lime zest, and 2 tbsp of tequila (optional) into your boiling sugar mixture.

    Divide the mixture in 1/2 and mix the packet of lime jello into 1 half and the packet of strawberry jello into the other half.

    Divide your popcorn in 1/2 and mix the strawberry sauce onto 1/2 and the lime onto the other half. Needless to say the sugar is BURNING hot so be careful.

    Mix the two flavors of corn together and place back into the oven.

    Stir every 15 minutes for an hour.

    After an hour remove from oven and add kosher salt, mini marshmallows (I personally like the fruity ones), and diced jelly fruit candies.

    If I am having a party, I like to put some of the corn into a big bowl on the appetizer table and then place some glasses filled with more popcorn around the room. I dip the rim in pink sugar and throw a fresh lime wedge on the rim.

I've also let the marshmallows melt and people love that. It makes for a sticky mix, but the taste is great.

this is so yummy! i made it for a get-to-gether for yesterday, and everyone loved it. after mixing the salt, baking soda, and marshmallows, i put it back in the oven for a few minutes to melt the marshmallows a bit...so good! thanks!

Thank you for the comments. I also wanted to point out that you can use koolaid instead of jello if you have that lying around.

Also, I think that it is about 12 cups of popped corn.
