Based on Make Ahead And Freeze Egg Dish by Sashibala
I had a pile of free range eggs that needed to be used so thought I'd try Sashibala's 'Make Ahead And Freeze Egg Dish', and it is yummy!
I made it with soy sausage as well as soy bacon, and I mixed the sausage and bacon in with the mushrooms and spinach so it was evenly mixed through, then topped with grated cheese, then the eggs. I used only 8 eggs, as this is only for me.
For those in Australia (or who work on C & not F on their oven) I cooked this in a 180C pre-heated for about 30-40mins, then checked it by sticking a knife in the centre. If it came out clean it was ready.
I'm eating some with a cup of tea as I'm putting this up - YUMMO!
